Free 30 day trial through my link - 🤍 FOLLOW ME: Instagram: 🤍 TikTok: 🤍 Facebook: 🤍 Snapchat: 🤍andy.cooks Website with all my recipes: 🤍 Director, Chef and Host: Andy Videographer, Editor: Mitch Henderson Production Manager: Dazz Braeckmans Editor: Caleb Dawkins Ingredients First marinade - 2 whole chickens, cut into 10 pieces each - knob ginger, grated - 4 garlic cloves, grated - 1.5 tsp salt - 1 tsp fresh ground black pepper Korean fried chicken sauce - 1 tbsp peanut oil - 6 tbsp Gochujang - 6 tbsp tomato ketchup - 3 tbsp hot honey - 6 cloves garlic, crushed - 2 tbsp rice wine vinegar (or apple cider) - 0.5 tbsp salt - 2 tbsp soy sauce - 4 tbsp water Dredge and frying - marinated chicken from the first step - 3L peanut oil - 3 eggs - 1.5 cups potato starch - 1.5 cups flour - spring onions and sesame seeds for garnish Method 1. In a large mixing bowl, combine the chicken, grated ginger, grated garlic, salt and black pepper. Mix well, cover with cling wrap and let marinate in the fridge for at least 1 hour. 2. To make the Korean fried chicken sauce, in a small saucepan over medium heat, add peanut oil and garlic and sauté for 2-3 minutes. Then, add gochujang, tomato ketchup, hot honey, rice wine vinegar, salt, soy sauce and water. Stir well and cook for 5 minutes until slightly thickened. Set aside. 3. In a deep fryer or heavy bottom pot, heat peanut oil to 175°C/347°F. 4. Dredge marinated chicken by adding the eggs and flour to the bowl of marinated chicken and mix well. 5. Place the chicken into the hot oil and fry for 8-10 minutes until lightly brown and crispy. Remove from oil and drain on a wire rack or paper towel. 6. Heat peanut oil to 190°C/375°F. Fry chicken again for 5-6 minutes until cooked through. Remove from oil and drain on a wire rack or paper towel. 7. In a large mixing bowl, add double-fried chicken and Korean fried chicken sauce. Toss well. 8. Garnish with sesame seeds and chopped spring onions. Serve with rice, cucumber salad and kimchi on the side.

Toss to evenly coat with 20g salt, ginger, and garlic. Refrigerate for 15-20min. Fill a large, heavy bottomed pot with 3” or so/7cm of oil. For my 6.75 pot, i use about 3L. More importantly, oil should be no more than 3” or 7cm from the top of the pot. Preheat over medium heat. You’re looking for the oil to reach a frying temp of 350F/176C. Transfer chicken to a towel and try well on all sides. Whisk together ap flour, potato starch, 15g salt, baking powder, garlic powder and onion powder in a large bowl. Into a second bowl add about ⅓ of the dry flour mixture and just enough water until the consistency is somewhere between loose pancake batter and cream. Add a drizzle or about a cup of the wet mixture back into the dry flour mixture. Stir and fluff until it’s crumbly and and very little powdery dry flour remains. Add the dried chicken into an empty bowl and toss with enough flour to coat each piece well. Toss between your hands to remove excess flour and set chicken on a tray to begin battering/dredging process. One by one, drop each piece of chicken into the wet batter to evenly coat. Shake/drain off any excess and move into the crumbly/craggy “dry” mixture to coat. Place on a tray. Carefully drop thighs into preheated oil, making sure that chicken isn’t touching - do this in 2 batches if needed. Fry for 7min. While drying, check temp and adjust if needed to keep oil at 350F/176C. Remove chicken from oil and drain on wire rack. Increase oil heat to 375F/190C and lower chicken back into oil to cook for another 5min until golden brown. Brush gochujang sauce onto as many of the pieces as you’d like. GOCHUJANG SAUCE ▪60g or 3 1/3Tbsp soy sauce ▪40g or 1/4c Tbsp sugar ▪110g 1/3c honey ▪100g or 2Tbsp gochujang ▪60g or 1/4c mirin ▪30g or 2 Tbsp hot sauce ▪20g or 2Tbsp ginger, grated/minced ▪20g or 4-5 cloves garlic, grated/minced ▪200g or just under 1c water Combine ingredients in a small sauce pot and bring to a simmer over high/med-high for about 15 minutes. Korean Fried Chicken | Sweet And Spicy Korean Fried Chicken | Crunchy Korean Fried Chicken | Yangnyeom-Tongdak | Crispy Korean Fried Chicken | Korean Fried Chicken Sauce | Yangnyeom Sauce | Korean Fried Chicken Recipe | Yangnyeom Chicken Ingredients for Korean Fried Chicken: (Tsp- Teaspoon; Tbsp- Tablespoon ) Boneless Chicken Thighs - 1 lb or 450 gms (cut into 3 inch long chunks) For the Marination: - Salt- 3/4 tsp - Crushed Pepper- 1/2 tsp - Grated garlic- 1 tsp - Grated ginger- 1 tsp For coating the chicken: - Potato starch- 1/2 cup (Corn starch can also be used but the taste will vary) For the Yangnyeom Sauce: - Gochujang Korean chilli paste - 2 tbsp - Mustard paste - 1 tsp - Light Soy sauce- 1.5 tbsp - Honey-2 tbsp - Brown Sugar-2 tbsp - Rice Vinegar-2 tsp Other Ingredients: - Sesame oil -1 tbsp - Garlic minced - 1 tsp - Red Chillies, cut & deseeded-4-5 - White Sesame Seeds - 1-2 tsp. Preparation: - Cut the boneless chicken thighs into 3 inch long chunks. - Grate the ginger and garlic to give 1 tsp of each - Finely chop or grate garlic to be used for tempering. - Deseed the red chillies and cut them into small pieces. - To make the sauce mix, add all the items specified for the sauce in a bowl and give a mix. Set aside. - Give a mix again just before adding to the wok later. Marination: Add all the ingredients for the marination (mentioned above) to the chicken. Mix and set aside for 15 mins. Frying Chicken: - Add the potato starch to the marinated chicken pieces. Dredge the pieces well to coat the pieces with the potato starch. - Arrange these on a plate side by side and heat the oil for deep frying. - Once the oil is medium hot, drop the coated chicken pieces one by one to not crowd the pan. - Do not stir for around 30-60 secs and then stir and fry on medium heat for 4-5 mins till the colour changes. - Remove the pieces from oil and keep on a plate. Repeat with the rest of the chicken. - All the fried chicken pieces to rest for 10 mins. - Heat the oil again to a high temperature. - Drop all the pieces from both the batches and fry on high heat for around 2 mins till brown and crisp - Remove to a plate. Process: - Heat sesame oil in a wok and add the chopped/grated garlic & red chillies. - Stir for 15 secs and then add the Yangnyeom Sauce (made earlier) & 50 ml water. - Mix and cook for 1 min. - Add the fried chicken pieces - Cook on high heat for around 1-2 mins to coat completely. - Sprinkle sesame seeds and stir fry for 30 secs. Dredge wings in potato starch and shake off excess. 4. Fry at 325 Fahrenheit for 5-7 minutes, then again at 375 Fahrenheit until golden brown and crispy. 5. Coat wings in sauce and top with sesame seeds and honey. Enjoy immediately for maximum crisp.
